Shak (or 'Sabji') is a term for a vegetable dish cooked with spices. It is the heart of any Gujarati dinner andis typically served with Bhakri, a Gujarati roti. Experiment with your favorite veggies. Traditional combos include lima beans/eggplant, cauliflower/potatoes/peas, peas/eggplant & broccoli /potatoes.
Ingredients [serves 3-4 people]
Option A: 1/2 medium eggplant & 1 1/2 cup frozen peas
Option B: 1/2 cup peas, 1/2 cup cauliflower, 1 small potato
1 tbsp oil
1 tsp mustard seeds
1 tsp dhana jiru
1/4 tsp turmeric
"GGC" 1 tsp chopped/ blended ginger/ garlic/ green chillies
1 tsp salt
1 tsp ketchup
1/4 tsp garam masala
1/2 tsp red chilli powder
pinch of sugar
fresh coriander (optional)
Nani Says: Defrost peas, finely chop eggplant. Heat medium pot on low heat, add oil. Once the oil is warm, add mustard seeds. Let them pop for a minute, then add dhana jiru & turmeric. Stir, add GGC, peas & eggplant, Add salt, stir & cover pot, cook for 10min, stirring occasionally (add 1-2 tbsp water if sticking to pan). Once the eggplant starts to break down, add garam masala, sugar & ketchup. Stir, turn off heat & let the flavors sit for 5-7 min. Garnish with chopped coriander, serve with bhakri or roti/naan
