Chickpea curry in a hurry. Also known as 'chole', chana masala is a Punjabi dish packed with iron, fiber & good-for-you spices. GF and Vegan.

Ingredients
1 can chickpeas, rinsed
1 large chopped tomato
1 finely chopped onion
1 tbsp oil
"GGC" 1 tsp chopped/blended ginger/ garlic/ green chillies
1 tsp chana masala
1-2tbsp tomato paste
salt to taste
1/4 tsp sugar
(optional) fresh coriander
Nani Says: Turn medium sauce pan on to low heat. Add oil and onions, stir. Add GGC, stir until onions are translucent. Add tomato and salt, cover and cook 3-4min or until tomatoes start to break down. Add chickpeas, 1 tbsp water & tomato paste, stir & cover and cook for another 2-3 minuets. Add chana masala and 2 tbsp water, stir and then add sugar and more salt. Cover and cook for 3-4 minutes. The curry is done with then oil begins to separate from the sauce. Give final story and garnish with fresh coriander.
Enjoy with rice or bhakri's/roti's. Or both.
